Hi @lpoquette221,
You can actually book as many one-way segments as you need to for your trip, and it won't be more expensive than booking a round trip. Give it a try! If you simply need to book a different return city than your departure city (say, Dallas to Austin to Houston instead of Dallas to Austin to Dallas) you can use the advanced search that @franktravel mentioned.

I want to schedule multiple city flights (Oakland to Tuscon to Phoenix to Denver to Portland to Oakland) for my son's college visits. When I tried Advanced Search I could only schedule 3 cities. Once I had 3 cities the "Additional Cities" button disappeared. How can I schedule more cities?

You can't do it. It's terrible that SW doesn't allow this. I book a lot of multi-city flights and always have to do them as one way trips. It's such a pain!
