I just booked 2 reservations for my parents and on one of the reservations I accidentally entered my last name for my mom. Is there a way I can change it to her last name?

There's no way to change a name. But, If you booked the reservations less than 24 hours ago -- just cancel, request a refund, and rebook using the correct names. Alternately, you could contact Customer Relations to see if they can fix this for you. I'd recommend reaching them via Twitter or the Chat function in the Southwest app. Good luck!
