Hi,
I have a handful of drink coupons that are going to expire. I have a 6a flight coming up and don't plan on drinking, BUT can I just cash in my coupons and take the alcohol bottles with me for my vacation?

I've never heard that question before, but I see no reason that you could not.

I'm sure the FA will limit how many you can take, though; out of fear you'll drink them all on the flight. Just a thought!

No, they must give you the bottles opened without the cap. (Sometimes they do, but that’s rare and not according to policy.)
However you probably can still use a “lightly expired” coupon in a later flight. Save them until you get a FA that will take them,
