For me, I'll usually try to sit in any window seat before the row with the "missing" window. Those have the best views in my opinion. Also get to enjoy the best of the buzzsaw during take off on the 737-700 and 800 fleets!

If I have to pass beyond the "missing" window row but before the exit row...still good views with the jet engine to complement.

If all those windows are taken up to the exit row by the time I get on the plane (this can happen even if I have a solid A position but boarding a through-flight with many on board continuing), I'll usually go a few rows back from the exit rows seats as the back is still empty at that point. The wing will be there but will rather complement the views rather than block it.
