I booked a return home flight for a child, then immediately realized I could sign up for the rapid rewards program (which I did). Can I redeem points for this flight since I am the one purchasing the flight with my payment information, but ticket purchased in her name?

If you actually mean "receive" instead of "redeem," no. Rapid Rewards points (like in all frequent flyer programs) always go to the person named on the ticket, not the purchaser. You can however open a RR account for the child so that they can receive points after completing the flight.
Once earned, anyone's points can be redeemed for flights for anyone else.
