Can a Young Traveler take a flight that has to make connecting stops or does the flight have to be nonstop?

yes Young Travelers (13-17) traveling alone can have a flight with a connection as I did them many times when I was under 18. The only people who can't fly with a connection is an unaccompanied minor (12 years old and younger)

I have seen some excerpts that say it applies to all types of flights including non-stop, one-stop no plane change, and connecting flights.

"Young Travelers" is just the name Southwest uses for children age 12-17 traveling alone. There are no special services offered, or limitations or fees required.
(Ages 11 and under flying alone must travel as Unacompanied Minors.)
