Agreed...the list of personal carry-on items have tightened and many "free" items are now counted toward the single personal item.
Neck pillows and food for consumption on the flight (must be in disposable containers) still do not count toward the personal carry-on limit.

If your chosen flight says "1 stop" in the little gray box and has nothing written below it, then that flight only stops to let passengers on and off...and will continue on to its destination. Normally, you would stay seated...although on longer layovers you are sometimes allowed to get off. Once everyone is off and the plane is readied for the next flight, you are often given permission to change your seat to a better one.
Otherwise, under "1 stop" in the the gray box, it will say "Change planes XXX", which indicates you will get off at XXX and continue to your destination on another flight.

I always pack one of those very small, foldable, nylon grocery-type bags in my carry-on. If the need arises that my carry-on needs to be gated checked, I can easily move valuables (electronics, medication, sunglasses, jewelry, etc.) into the nylon bag for under seat storage.

First...check the back (upper left) of the car seat to be sure there is a FAA sticker on it. I'm sure there is, but just double-check.

When booking travel, click on the hyperlinked flight number to find the aircraft series size for a specific flight. This car seat is wider than most...at 20 inches. It should fit if you put the armrest up between you and the car seat. Be sure to install it only in the window or middle seat. It cannot be placed in the aisle seat. If you choose to install it in the middle seat, you cannot raise the armrest between the middle and other unoccupied seat, infringing on that passenger's space. In my opinion, you will have a better fit placing the car seat in the middle and raising the armrest only between the two of you.

Both your empty water bottle and supplement powders can be packed in your carry-on luggage. In fact, you can pack your supplements (or anything else that's compliant, for that matter) inside your water bottle to save space in your luggage. Sometimes unusual-looking items may need to be visually inspected and swabbed...but shouldn't have an issue passing inspection.

What you learned in training is correct...service dogs should not be crated while working. They are usually only crated at home during rest or to de-stress.
Would your service dog be able to work and alert if he was in a crate under the seat in front of you?? If the answer is yes, then he can be crated during the flight. If the answer is no, a legitimate service dog should not be crated, as it defeats the whole purpose of allowing him to do his job.

The pet policy on Southwest Airlines is very clear...cats and dogs only. If you had followed the pet policy directions, you would have had to call to make your pet's reservation...and then would have found out that your chinchilla would not have been allowed to fly. I'm sorry you found out the hard way.
Specific to your case:
We welcome small, vaccinated domestic cats and dogs in an appropriate pet carrier in the cabin on domestic flights.
Space is limited, so we ask that you make a reservation in advance by calling us.

You are starting your trip on the right foot by choosing Southwest Airlines 😀!
You are correct. You may each take one carry-on bag that fits in the overhead storage. In addition, you are each allowed one personal item that will completely fit under the seat in front of you. That personal item can be a purse, a small tote or backpack, or your daughter's stuffed animal. I usually bring a tote and place my small purse and other small items (snacks, electronics, etc.) in that.
For your liquids/aerosols/gels/creams/pastes, you can stuff as many as you can in a quart-sized zipper-type plastic bag. I would be impressed if you could fit nine!! The "liquids" are limited to 3.4 ounces or less. You may each have one quart bag...so it may be a good idea to have your daughter place her stuffed lovey in her own backpack (with its head sticking out...adorable) and also carry the second quart bag.
Remember, both quart bags will need to come out when you go through TSA security, so have them on top/readily accessible.
Let the flight attendant know it's your daughter's first flight. The flight crew **might** invite her up to look through the door at the flight deck. I saw them take a little boy up to see it last week. He was so excited.

This is SWA baggage Policy:
Each Customer is allowed two free checked bags.
Sizing for your checked bags:
Up to 50 pounds each
62 inches in size (length + width + height)
Three+ Bags: $125 per bag (within weight and size limits)
Oversize Bag: $125 per bag (62 inches to 80 inches max)
Overweight Bag:
$100 per bag (51 - 70 lbs.)
OR
$125 per bag (71 - 100 lbs.)
Only one $125 charge applies if the piece is both oversized and overweight, regardless of the weight as long as it does not exceed 100 lbs.
Also note that excess baggage which is also overweight or oversized will be charged excess baggage plus the applicable oversize or overweight charge. This is where it gets expensive.
In total, a Customer is limited to check 20 pieces of checked baggage per flight. This limitation includes Carrier’s Free Checked Baggage Allowance and excess baggage would be subject to applicable excess baggage charges.
Have you considered ground freight? It may be less expensive...

For clear transparency, I don't know SWA's policy on putting two such items in one bag.
However, I definitely wouldn't do it. There is more of a chance of either or both items being damaged moving through the baggage system, as they can "clank" together or cause the bag to become unwieldy during handling.
If you don't want to purchase a separate bag for the car seat, you can place it in a large, heavy-duty, clear plastic bag and secure it shut. You may want to bring a spare bag for your return trip.

I would wrap the folded beach chair in beach towels and then pack it flat in a cardboard box. You can strategically make a cardboard box to custom fit it by using one or two other large cardboard boxes that are cut to size and securely taped together.
Write FRAGILE in red on all sides of the box.
To avoid excess size charges, the finished box will need to be equal to or less than 62 inches in size (outside length plus height plus width).
Also be aware that you will not be entitled to reimbursement or compensation if it is damaged, as this will be a situation where limited release of liability applies.

You need to have your bag checked in 45 minutes before your scheduled departure on a domestic flight. It will usually be tagged "Late Check-in" at 45 minutes and will not be guaranteed to make it aboard your flight.
You need to have your bag checked in 60 minutes before your scheduled departure on an international flight. If you don't meet this check-in time, you probably won't be allowed to board.
You need to have your bag checked in 75 minutes before a flight to Aruba.
To save time, you can check-in your bag digitally after you check-in online, and then just print your luggage tags at the airport kiosk and hand over your tagged luggage to the customer service agent at the counter.
Also, remember to allow time to go through security if you are pushing the time limit for check-in.
And, you can now track your bag digitally to see if it made it onboard.

I'm really sorry this happened to her.
Southwest Airlines asks that passengers report any “unwelcome behavior” on their aircraft to the flight attendants on duty. In fact, as of January 2020, it’s now part of the airline’s required pre-flight emergency briefing and demonstration, right after the instructions about operating oxygen masks. The FAs are empowered to remove customers who are being harassed from these types of situations, regardless of how full the flight is.
But they need to know about it at the time it happens.
Even though she is able to provide identifying information, this situation, unfortunately, turns into a "he said, she said" circumstance.
She can use the blue Contact Us button at the bottom to describe the occurrence with the details you posted. My guess is that she'll receive an apology and, if she had a RR account, perhaps a few goodwill points as well. And while I understand your desire/reason to assist, your partner should be the one doing the reporting, not you.

So...no, clothes cannot be packed with your gear any longer. My guess is that passengers were taking advantage of the then-generous policy, and that ski and boot bags were approaching or exceeding 50 pounds.
Last year, I packed a few extra items of ski clothes with my ski gear. For instance, I wrapped one pair of ski pants around my skis for extra padding and stuffed gloves in one boot and goggles in the other. I had no problems and was not asked about clothes with my gear. I was lucky. But, they are now enforcing it more stringently. I advise that baggage policies always be checked for updates. They change more frequently than most people think.
My ski gear has always been opened and check by TSA when I fly out of PDX...I always get that little card placed inside. All good; they're doing their job!
I think she misspoke when she said "TSA wouldn't transport it"...as TSA is not in the "transporting" business...which is a good thing!!

The tax exemption is for sales tax only.
The airline "taxes" can be a combination of excise taxes, arrival and departure taxes, federal fees, government-imposed September 11th security fees, etc. Unfortunately, these are not exempted for non-profits or schools.

As you stated, the policy reads:
Your carryon can be no bigger than 24” (L) + 16” (W) + 10” (H). If it’s bigger than those dimensions, it will need to be checked.
I tend to take these measurement to heart because I don't want my luggage inadvertently gate-checked when it isn't packed for that type of "movement." That being said, I have never had my carry-on measured. When my bag is full, it approaches an 11" measurement. However, it is soft-sided...and therefore, "squishy." Interestingly, it was very full last week (probably close to 12 inches) and wouldn't push entirely back in the overhead storage. I was so embarrassed. Don't be me 😉. Out came my puffer jacket from the outer pocket...and it fit.
Go with soft-sided, don't overpack the outer pockets, and you will probably be fine.

YAY! You chose a good airline for your first flight.
Yes, your backpack will be considered a personal item and fits the size constraints. It should be placed under the seat in front of you. Since it is right on the limit for size, I wouldn't overpack it as it must fit completely under the seat.
Carry-on bag limits are 24" x 16" x 10" and yours is under that limit...so you should be fine with that too. It will need to be placed in the overhead bin.
Just in case your carry-on bag needs to be gate checked due to no space (it sometimes happens), I would recommend that you place medications, jewelry, sunglasses, or any other valuables/non-replaceables in your personal item (backpack).
