I received an LUV voucher from a previous flight being delayed/canceled. If I go to book another flight and use this voucher to pay for it, does it still earn me the Rapid Rewards Points that I would usually earn if purchasing a flight?

I believe that anything that shows up as a $ payment towards the final price would allow that flight to earn RR points.
A voucher does that.

You will earn Rapid Rewards points and the flight will count towards A List and companion pass
Just another note keep in mind with LUV vouchers they don’t cover taxes so you will still have to pay a little bit on a Credit card or use a travel fund and the travel fund will cover taxes. Also note If you pay the taxes with a credit card the funds will keep the expiration date of the voucher should you have to cancel later. if you apply a travel fund the earlier expiration date between the travel fund or voucher will apply.
