How is it possible that there is a 90 minute wait time to get help with an error I made while booking a flight? There was not even an option to get a call-back. So I am sitting here for an "estimated' wait time of 97 minutes. I cannot believe how difficult Southwest is making it to get help/support.

I would try reaching out to Southwest on Facebook or Twitter in a DM and they are usually quick to respond.
If you just made the flight booking (within 24 hours) you can cancel for a refund and rebook but at the current fare. This can be done on the website or app no phone agent required.

Don't call! Southwest is very active on their social media channels, particularly through private message on Facebook and Twitter. Please try that and they will get back to you, normally in minutes, even in these times.
