I have never used travel funds but I have some now from a single flight I cancelled. If my future flight is less than the travel funds i have identified from a cancelled flight, will i retain the balance of the funds to be applied to a different future flight?

Absolutely! Travel funds can be used toward more than one flight if the balance will cover more than one. You just have to complete all the trips by the expiration date of the travel funds.

Also note that depending on when you travel funds were created due to your flight cancellation, you might have a significant period of time to use the funds due to the current COVID-19 situation. Learn more about that here.
