I'm also not sure what the rules are nowadays. It previously was airplane mode only but then you could use wifi to take advantage of the onboard wifi/entertainment. I agree with @dfwskier that broadcasting a signal may be a no no. Could you do it? Yes. Should you do it? Probably not.
I also wonder if it's worth the hassle for a plane ride when Southwest has a decent assortment of live and recorded shows and movies available for free, but that is entirely up to you to decide. The device is an interesting concept for car rides or camping with the family.

Single traveler? I would guess that you will be able to find an aisle seat, but it's far from a sure thing. If you really want to relax and not stress out about possibly being stuck in a middle seat I'd suggest purchasing the upgraded boarding after you check-in. It will probably cost about $100 to upgrade both flights. If you're a gambler go ahead and take your chances, good luck.

The counter for earning towards CP resets on January 1 so any companion pass qualifying points you have earned in 2022 will remain in your account, but will not count towards earning CP once hit Jan 1 comes around. If you have a new credit card you are attempting to earn CP as early in 2023 as possible so it doesn't expire until Dec 31, 2024 which means any CPQ points you have now are not relevant to the situation. You seem to be on the right track by understanding you do not want to hit the minimum spend to earn your bonus until January 1. Keep in mind though that points post shortly after your statement closing so if you know when your December statement starts, that's when you can really begin to spend and the points will post to your account in January. The 3 month clock starts when you are approved and you will be able to see the exact date and progress towards your minimum spend in the Chase app.

If you all happen to get A boarding positions then board at the worst A position of the group. If you don't get A then 99% of the time you can all board during family boarding between the A and B groups without a problem. Most gate agents will not question this with 2 children of that age. Otherwise one adult and the 6 year old can board in family boarding and then one adult and the 8 year old can board in their assigned positions. You can also all board together at the worst of the boarding positions. You can move backwards in line, but not ahead so no one needs to worry about boarding alone.

Yes, The word fare can be applied to the cost for a flight regardless of the payment method. Fare does not include taxes and fees, just the portion the airline keeps.

@floridaguy you'll notice I did not refer to credit score but rather "how banks view you". If applying for new credit cards banks will want to see credit utilization. If they see zero percent utilization there is no belief you will actually use the card and may be denied for new credit as you are not demonstrating use of the credit. The OP stated they are strategically planning to maintain their utilization, not zero it out, thus they are utilizing other cards and can pay the Southwest card as stated.

You can make the payment early if you want, that does not affect you getting RR points, but there is no need to pay any time earlier than your payment due date. Paying before your statement date may actually harm how banks view you since you are not actually utilizing your credit. That sweet spot is after the statement date and before due date.

Coverage of hotels and food depends on the reason for the delay. As the OP did not provide or receive a reason no additional commentary about what should have been provided by Southwest can be made. Some credit cards offer trip delay insurance that may cover costs associated with hotels or transportation to the destination via an alternative method, but again, that coverage often depends on the reason for the delay. If I were the OP this is an area that I would be looking into, first determining what, if any, coverage my credit card offers me and getting more information about the reason for the delay from Southwest.

Anytime fares include EarlyBird Check-In. EarlyBird Check-In means you will be assigned a boarding position automatically, ahead of everyone else doing general check-in. You still need to go through the check-in process to obtain your boarding pass and can do that anytime within 24 hours of your flight. When you actually complete the check-in process has no affect on your boarding position because of EarlyBird.
B25 seems like a very reasonable EarlyBird position depending on the route, time, etc. Also, if you changed your flight or repriced it after the initial booking that resets your position in the EarlyBird queue.

As you learned the hard way, wheelchair assistance is not provided by the airlines, instead third party companies run the service at airports for the airlines. After covid many of those companies are very low on staffing. If you find a contact (email or phone number) for the airport you were flying at you could voice your displeasure with their service.
